“The Ecology Center, a Michigan-based nonprofit organization, today released the results of their testing of 1,200 popular children’s toys for toxic chemicals at www.HealthyToys.org. Working with environmental health groups across the country, the Ecology Center led the development of the site to inform consumers about products they will be purchasing this holiday season. Parents and other holiday shoppers can now easily search by product name, brand, or toy type to learn how the products rate in terms of harmful chemical content.”

Share a Christmas Recipe

Monday, December 10th, 2007

This recipe comes from a friend of my mother’s. I like it because the red maraschino cherries make it Christmasy. It has a buttery taste complemented by a toasted coconut flavor. Also–it’s easy to make.

Cherry-Coconut Bars

Pastry: 1 cup sifted flour, 1/2 cup butter, 3 tablespoons confectioner’s sugar

Filling: 2 eggs slightly beaten, 1 cup sugar, 1/4 cup flour, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 1 teaspoon vanilla, 3/4 cup chopped nuts (optional), 1/2 cup coconut, 1/2 cup quartered maraschino cherries ( I use red, but you can use green).

Heat oven to 350 degrees. Mix pastry ingredients with hands until smooth,. Pat into bottom of an 8 inch square pan with your fingers. Bake about 25 minutes.

Stir the rest of the ingredients into the slightly beaten eggs. Spread over the top of the baked pastry. Bake about 25 minutes. Cool in the pan. Cut into bars. Makes about 18.

Enjoy.
